Will the USCIS know I changed job within 180 days after 485 pending?

Company A sponsored my LC and 140 and both were approved.
my termination day in company A is 6-1-07.
Company B filed H1 visa transfer for me on 5-1-07
I started work for company B on 5-14-07 after getting the visa transfer recipt.

Now I am entitled to file 485 based on the approved LC and 140 from company A on June 1.
but I have difficulty to get permanent job offer letter from company A.

My question is:

If I submit an old employment verification letter (dated 2005) and the latest 3 paystubs (March, April, May) from Company A for 485 on June 1st.

1, what is the chance I can get withwithin 180 days after 485 filing for approved, RFE, SOID, or denied ? assuming that company A will not revoke my 140.

1, Will the USCIS know that I leave company A for B? Because my new H1 visa from company B is still in process now, I am using the H1 visa for company A which is effective until 2009.

2, which is more risky? submit an old employment verication letter or no such letter?

3, Do employers usually send USCIS notice for H1 termination when the employee leaves?
