When and how to select between CP/AOS ?

How and at what point in the greencard process do I chose between Consular Processing and Adjustment of Status (I485)?

at I-140 stage.

You indicate your preference in the I-140 application. If you opt for CP you still can file for AOS if in the US without further questions. If you opt for AOS and then want CP after your I-140 approval you have to file I-824 and await their approval to do Consular processing.
