A very subjective question indeed. Only you know what is best for you. If I were you, I would have taken the second offer(with 10% less than current pay), for the following reasons:
1. My 485 was filed in May 2002 and chances of it getting approved within this another year is very high, compared to going to Canada and risking a very low Canadian salary (even if you consider your 1 year US salary that you get as 'sign-on bonus', it will probably be still be lower to the 10% cut over a 3 year period).
2. Canadian economy is improving, no doubt, but still it is closely tied to US economy, and not as good as US economy. In US I already see signs of improvement. For the right kind of skills or education, the salaries are still pretty good in US
3. Personally, I prefer warmer places like California, Florida, etc. compared to places in Canada (I would partly be willing to consider Vancouver, BC, though)
4. Suppose, even my second employer lays me off after sometime, but still there are lots of options and employers in US (combined with the fact of #2 above), but right now, I am not sure if I have so many options in Canada.
5. My wife is a Pharmacist, and she feels she has better scope here than in Canada on an overall basis.
So, like I said it is very subjective. Try to set up such touchpoints and evaluate each from your perspective, and assign some weightage to each touchpoint, like, 10 points for very important, 8 points for important, etc. and sum it all up. I am sure you will have a pretty comfortable answer to take a decision that you will not regret later.
I am sure being in a EB1 category, this is something you will be doing in your day to day management, but when it comes to personal things we sort of hesitate to apply them, right?
