My interview is on January 7. I want to know if there is anything after the interview that requires me to stay in US for a couple of days/weeks/months (I have an advance parole). I would like to travel to my home country with my wife, that's why I am asking this. Thanks.

What happens after your interview depends on the result of interview.
If you are approved. You can request a stamp on your passport for travel. You will not need advance parole. The GC will arrive in the mail later.
If you are approved pending namecheck. You can travel on your Advance Parole.

I am in the same situation. I had my interview on July 26th. Interview went well but my case is pending for name check. I am traveling to India on Dec 21. I have advance parole. Is it safe to Travel just on Advance Parole? I don't have any stamp on my passport. Is that ok?? What documents should we carry??

You can not get any stamp valid for returning on your passport if your namecheck is pending, but yes, your AP can be used for travel and it is "safe". For as long as you are not a terrorist.
So in any case there is nothing to wait. Is it pretty safe to buy my tickets for any day after Jan 7? What I understand is AP is still valid even if I am approved (not pending namecheck.)
If you are approved you cannot travel on AP. You will need to get your passport stamped. If you have a name check pending than you must use AP to reenter (if you have a dual intent visa you may enter on this visa, if it is still valid)

My understanding is that you cannot be parolled as a permanent resident. You need to enter the US with proof of permanent residency, which would be the I-551 stamp. Beg for it if necessary (be sure to bring your tickets as proof that you absolutely need the stamp, maybe have to make an infopass). Or wait in the home country until it arrives in the mail, have someone send it to you, and then enter with it.

But he CAN NOT obtain the I-551 stamp until he is approved (and he would likely be out of the country). I guess you could have someone bring you the Green Card? or mail it (if you want to take the chance).
So what happens for some reason I am approved and my name check is complete but the officer does not stamp my passport? Is AP still valid?
NO!!! You will need to make an infopass and receive a I-551 stamp in your passport.
