I have filed for my I 485 in 2004

Starting July 1st, there is a chance my I 485 can get approved anytime?

If my I 485 gets approved and my spouse's I 485 application has not reached USCIS yet, can there be any problem?

How many days do we have to file for my spouses' I 485 after mine gets approved?

If your date is current, then yes.

If my I 485 gets approved and my spouse's I 485 application has not reached USCIS yet, can there be any problem? How many days do we have to file for my spouses' I 485 after mine gets approved?

What is your status, and your wife's? So long as you were married before the I-485 is approved, you should be in good shape. Are you using an EAD? Is she in valid non-immigrant status?

Nothing. Since you're an EB case, your wife can file her I-485 up to 180 days after your I-485 being approved without penalty.

You should not consider retaining this attorney.

Yes, she'll be out of status from the time your I-485 is approved to the time her I-485 is filed.

It's not a "rule", is section 245k of the INA. It's the law.

So what? Just file the I-485 package yourself.
