Unstable job - AC21

My current job doesn't look stable and I got an offer for a new job but that's not same or similar to my current job. I have an EAD with I-140 approved and I-485 pending for > 180 days. How risky will it be for me to move to this new job as a stop gap arrangement for a year. I can always try to get a same or similar job before my I-485 adjucation.

---------- you need permanent job offer with same/similar skills at the time of I-485 approval. what is your PD? EB3 or EB2. then decide your move if you think I-485 will not be approved in 1 year
