For personal reasons, I took several months unpaid leave this year. The result is that my annual income, which will be reflected on my tax form, is lower than that in my H1 petition. I heard that when filing I485, I will be required to provide tax return information of the previous three years to INS. Will my low income of this year be a problem?

No. Generally the W-2s will provide info about your employer's ability to pay you after GC approval. The only likelihood is that U might get a RFE later after filing 485, which you can respond accordingly.
