I have my AOS interview scheduled for a morning in August. Later that day I have tickets to travel to Canada. I have my travel parole documents in hand. I'm trying to figure out what my travel restrictions might be after the interview, assuming all goes well. Will I get a stamp in my passport to allow for travel or will I use parole docuements for the trip.

At your adjustment interview the IO might stamp your passport with something that says "I-485 Pending" or something similar. If you get approved for adjustment you might get an I-551 (temporary permanent resident) stamp. The I-485 pending stamp is supposed to prevent you from using a non-immigrant visa or the visa waiver program to re-enter the US (however, there are plenty of people who have claimed to have re-entered the US with the stamp and without a US travel document). However, since you already have a travel document, then you could simply re-enter using that document.
If you get the I-551 stamp, technically that means you can travel just using your passport. However, from personal experience and from others stories, I can tell you that sometimes airline staff will insist that you must have a greencard to re-enter the US. You may have to argue with them about this.
P.S. - If you have overstayed a visa or visa waiver prior to filing the I-485 you shouldn't leave the US until after you are granted permanent residence.

If you are not approved, then you can use your AP document for the trip.
If you are approved, reveal your travel plans and plead the officer to stamp your passport.

Q1) If one has received AP, and also gets approved at Interview, can one travel out of US?
Q2) Do they take I-94 if the gc is approved at interview? and does that mean one cannot travel outside?
Is it absolutely necessary to have stamp on passport , if one wants to travel out of US, after successful interview?

1) Yes you can travel if you haven't overstayed long enough to trigger 3-year or 10-year ban. If they don't give you a passport stamp at the interview, you can use the AP to travel.

Yes, you can travel provided you passport has been stamped with I-551 stamp for temporary resident.
Yes, they take all those documentation. You can travel with the I-551 stamp. Don't date try to travel without an approval or I-551 stamp on your passport.
It is critical to have the stamp after you are approved, especially if planning to travel the day after the adjudication of your case.

Q2) Can there be a situation that they take AP and also dont put the stamp on the passport..then does it mean u r stuck for 3-4 weeks?

Q2) Yes. So insist on getting the stamp before handing over the AP. Or don't take the AP to the interview, so they can't take it away.

haha he hecool idea not to take the AP with you to the interview... unless they ask u to get all the paperwork u recived or sent..
i hope that doent offend them in any way !!
so they take for sure the I94 right??? and when u enter back with AP, do they issue u another I-94?

Yes, you'll get another I-94 when you return ... unless they finalized the green card approval in the system, in which case they'll process you as a new permanent resident and you won't ever need to touch another I-94.
