Hi, I am doing an Employer Transfer of my TN status through mail (I-129). Apart from the cover letter, employer letter, fee for renewal, copy of degree, what else do i need to attach? Does one require pay stubs for TN employee transfer? Any help would be appreciated.

It's not a "Transfer" or a "Renewal" you are requesting a new TN for your prospective employer.
You send copies of everything you have listed

also copy of proof of Canadian citizenship (passport), copy of front and back of current I-94, I-129 Form and NAFTA supplement.

Does anyone know if I really need to include pay stubs? or is it just optional? Unfortunatly, I don't have any on hand.

pay stubs should only be included if USCIS has reason to believe that you have not been working at your current job and thus have been out of status for a while.

pays stubs are not required, but on subject of the lack of paystubs:

I'm always curious when someone says they don't have any paystubs. Surely you get at least one a month. Since one obviously plans to transfer jobs, takes the time to research the firm, gets interview, etc. Wouldn't it also make sense to hold on to my most recent paystub?

Employers are required to give you a paystub, or provide a method for you to get one on-line. If you are a contractor, you obviously have invoices. I always suspect those who say they don't have any as, as gunt pointed out, likely to be out of work at that point.
