I'm right now reading the I-864 instructions and it clearly says that the sponsor must be employed, regardless teh fact that the sponsored immigrant is in the household and his income qualifies.
Should we just get a joint-sponsor (my father in law) in order to avoid getting a RFE?

The instructions also state that sponsor must meet the minimum income requirements via income or assets. It is not mandatory that sponsor should be employed. If sponsor is not employed or has zero income, the sponsored immigrant can include his/her income to meet/exceed the requirement. If all fails, a joint sponsor is needed.
