Get what you can get and that's it. Tax transcripts are not even needed
for application based upon 5 years of GC and for application based upon 3 years of marriage, would 3 years of transcripe be enough?

I agree. I had my interview yesterday and was not asked for tax transcript eventhough I accidently said I failed to file.
