I just wonder whether I have to file any forms with INS if I work for a new employer when my I-485 (NIW I-140) approval is still pending. My concern is that I will not have a valid I-94 since my current I-94 attached to H-1 will expire in a couple of months.
so you need not file any forms with INS after filing 485. But be sure that you have a EAD or done a H1 transfer before joining the new employer. If you decide to get EAD, get AP also.
