Why do you need state tax transcripts? As far as I know, federal tax return transcripts should be quite sufficient for the interview (and in fact even those are not required in most cases).

I don't know what JohnnyCash's advice was based on. I don't remember ever reading any post in this forum where anyone was ever asked to produce copies/transcripts of state tax returns. Even federal tax return transcripts are usually not required and they may only be needed in marriage-based cases or if you had a potential break in continuous residency (e.g. if there was a trip abroad longer than 6 months).
Federal tax return transcripts should be enough.

If you really want to get some documentation regarding state tax returns (which, I believe, is quite unnecessary), you'd need to contact the tax authorities in the particular state where you live and find out what the procedures there are. Tax laws and services vary greatly from state to state. I suspect that many states do not provide transcripts of state tax returns at all; this seems to be the case here in Illinois.
 
State tax transcripts are generally only asked for if you previously failed to file state taxes, as proof of martial union, and as proof of state residency. If neither applies to you then you shouldn't worry about it.
