You do not have to prove that you worked for 180 days.
GC is for future employment therefore letter should be suffcient.
However if RFE is issued requesting pay stubs then it is better you submit the documentation with pay stubs.
Incase if you do not have pay stubs and only employment offer then your lawyer has to fight for your case.
