Self-sponsorship via USC parent. Feasible?

Hello,
I've been in the USA with a temporary work visa. My father is USC and for personal reasons we haven't talked in years.

Can I apply for a Family based GC without getting him involved at all? Given my income and savings I'd be able to cover my own Affidavit of Support.

Also, in the sticky thread "US citizen parents sponsoring over 21 son" it says :
"If you are not from Mexico or Philippines, you will be able to file I-485 (and EAD etc.) after approximately 5 years."

How does it work if from Mexico or Philipines?

It's a 16-18 year wait if you were born in Mexico or the Philippines.
