Risks in changing job 6 months after 485 filing

I have passed 6 months after 485 filing. I am wondering about what the risks are to change job at this stage. What happens if USCIS reuqests additional documents when I lose the current job or the new job?

There is always added risks when the situation is more complicated, for example, changing jobs, having arrests, multiple cases, etc. However, if you carefully study AC21 before making a move you can minimize the risk to some degree. For AC21, the key things are "same or similar occupation" and I-140 approval, among others.
