Did anyone heard/received RFE asking to prove status of the applicant all the way from the time I-485 was filed. Was anyone asked to provide paystubs for the whole time between I-485 filing and RFE creation which normally would be around 18 months ?

Not mine personally, but there were instances here were members had posted, that they were required to submit paystubs, W-2s for the entire period of 485s and in some cases even from the time Labor was filed.

If you are asking me, then NO. I did not get any RFE until now but I saw one or two postings here where the RFE required paystubs during the entire I-485 period. I guess if the officer is asking for W-2's during the entire period, it could be because the applicant did not submit W-2's at the time of the filing his I-485.

I started working with the sponsoring employer as soon as I filed I-485 and got my EAD. I continued working for them for 7 months afer that and then I moved back to my old company. The sponsoring employer has no problem with that but there is a gap of 3 months between the time I left the sponsoring company and joined the old company. I don't have paystubs for that period. Now I am on payroll. I am concerned what would happen if an RFE is issued asking for paystubs for the entire I-485 period. Can someone advice me on this. Thanks.
 
If you have an EAD then

you are ok to stay not employed unvoluntarily. I have understood that AC-21 case can be activated if you have a future work and INS didn't adjudicate for 180 days.

Generally, NSC will not ask for all the paystubs and W2 kind of stuff. It is common in other centers like VSC.

Most of the times NSC asks for Employment Letter.
