resignation letter from previous job

Hi,

If I apply for a TN visa one day after resigning, should I expect the border officer to ask for a resignation letter from my previous job?

You don;t need to provide anything from your previous job. In fact, you could still work for both jobs.
 
Big detail that you failed to mention. Still, getting TN would invalidate your H1-B in any event, so no need to provide anything from that job. Your H1-B employer is the one that legally must tell USCIS that you are no longer in their employ, not you.
