it would have been much more easier for you if you had just gotten some one to fill a form I-864A for the both of you. it will be combine with hers to make extremely exceed the poverty guideline.

I finally got my interview date ! Oct 17. I think if it wasn't for the Request for Initial evidence it would've been done sooner, but I'm glad its here now... what do I need to prepare for the interview?

In the interview letter they give you a checklist of items you should have with you at the interview. Just gather all those documents and evidence and be sure to photocopy everything. Go to that link ananga73 posted and download the document that has the list of questions people have been asked at an interview, review those questions with your wife and review the documents you originally sent (I-130,485,G325A etc) and you'll be ready :)
