Question for the removing the conditional green card. I already got the green card for 2 years, and want to know what are the documents that we should be still gathering or collecting in order to file for that removal? Meaning, do we have to keep all the bank statement since now and when the time is due, file the statement from now to then? That will be a huge document, suggestions please?

For papers such as Bank statements attach 1 oldest one and 1 for the most recent months.
You need to send as much of joint papers as possible, such as but not limited to Credit Card statements, Lease or HUD purchase papers if purchased a house in the interim, joint utility bills, insurance's medical, auto, life if any.
A BC for child/ren born to the couple if any if no kids then Two affidavits from close family members of the couple.
Be advised the more evidence you send, less chances of having a interview with USCIS.

When the time arrives to file for removal of conditions (I-751), the documents to send are basically just updated versions of the same docs you sent when applying for the green card ... recent bank statements, lease/mortgage statements, etc. plus documents for new accounts you opened after getting the GC.

That is not necessarily true; too much information can also be detrimental. The amount of documents should be substantial but not overwhelming. If the pile of papers is so large that they'll need hours to look through them, your case is likely to be delayed or they'll just forget about the cumbersome pile of papers and decide to get their answers with an interview. Sending a massive amount of docs also increase the chance of them finding an apparent discrepancy.

When I submitted my I-751, I attached copies of 21 documents. One document covered each of the 21 months between my conditional PR approval and my I-751 submission. I had 7 different types of documents to make up the 21 months.

Could you elaborate on this? does that mean we will have to save the document starting after 10/15 (the date I got my GC), and send the doc from 10/15 - whenever the submission of I-751 is?

Correct. I-751 adjudication primarily looks at the period from your conditional approval to the 21 months ahead when you file your I-751.
