I am currently in the US under a visa but I am gonna opt for CP
are they gonna ask me some recent paystubs at the embassy?
its not part of the required documents....for CP at least,maybe for AOS.
But i dont know

We live in US also..I don't think they will ask for that..They will see that you have a valid nonimigrant visa..But I think it would be nice if you have them with you..We are planning to take them with us..

Better safe than sorry mate. I would bring paystubs, W2's, bank statements etc whatever might help your case. It will be a hassle to cordinate that from outside the States...
They can ask you to proof your assetts. If you have savings of the required amount they might ask you to show where it came from. It isn't allowed to borrow the money or to take a loan out prior to showing the amount. So they can ask for a paper trail.
