Are re-entry permit and GC sufficient enough for going to Canada for a short trip (passport is unavailable)?

No need for passport or reentry permit. GC is sufficient.

What do you show to immigrations on the Candian side? How about on the US side (on the way back)?

On my visits to Canada, I only showed the GC plastic on both sides of the border.

The officers enquired on my citizenship but didn't ask for the passport. This may not be the case always @ every border crossing.
