my opinion
just take your passpoer and go for stamping renewal. if you have space in your bag take a copy of the I-485 approval.
Local INS have means to find out that your plastic card has not arrived when you tell them the reason for renewal.
Not to down play the info you are looking for but if can you come thru the approval of I-485, getting the passport stamped for the second time is not a big deal. I don't think they would verify anything about current employment.
I wish Greaty-k can put a link in rupnet for receipt of cards so others have an idea when to expect the plastic cards.
