Those dates really are not that meaningful. We all know that TSC is actually processing the Nov, Dec. even Jan. 2004 I-485 cases. The only reason the dates are some how useful is that if your case is 30 days earlier than the processing date, you can call the 1-800 number to raise a query, but it takes TSC another 30 days to response to the query. Some dates are bogus dates. For example, the date for EAD is 2/18/04, but I have my 3rd EAD with N/D 2/13/04. I cannot query my case yet because they have this 30 days window, which means they gain another 30 days time to process my case. When the time I can inquiry, they've got enough time to approve my case. Haha, well designed system.
