Hi,

When I filed the form I-765 for the OPT, I had already specified that is was a Post completion OPT. So, doesnt missing the completion date lead to problems ?

I-765 doesn't have any fields for post-completion or before completion OPT. What you filled out is the paperwork with your own International Center, who then recommends that you be granted OPT based on all factors.
