Likelihood of a k1?

I'll try to make this as short as possible. Me and my gf live in texas first off. My gf was granted a student visa some years back (she's Honduran). Well a couple months before her visa expired she left the US in a car and through the Mexican border. She has family and friends that she visited before heading back to Honduras. The problem is she did not keep her flight stub from Mexico to Honduras nor did she mail her I-94 form back in.. She has been at home working for the family business so there are no real records that she has been in the country as long as she says she has been. There really is t any proof that she left when she said she did other than an appropriately dated return stamp on her Honduran passport. My question is this. It's been a couple years now and we want to get married. Will this situation Inhibit me from getting a k1 visa for her? What is the best option for getting her back to the US so we can get married? Should I fly there and marry her in the us consulate? Will that take to long for her to get back to the US? I'm open to all options.
 
Is she your fiancee' or your friend engaged to someone else? You posts contradict each other.

She is my fiance the two posts are similar but the other one is reffering to her friend that came with her and got the same student visa
 
What if I flew to Honduras and got married there? Would that supersede these mishaps? Would I be able to get her back home?
 
Overstay will not be forgiven just because you marry her. What was written on her I-94? Did it have a date or had "D/S" written on it?
