Leave Job while waiting for AOS

My story:
Filed 130 / 485
finished interview (April) went well. waiting for background check to complete
I live away from my spouse - was thinking of quitting my job and take a break while I wait for my AOS.

Is there any problem doing this? I wont be considered out of status will I?

Secondly, if I move and file a change of address, will my DO move? resulting in any additional delays?

I am not sure about the answer to your second question, but the answer to your first question is no, you will not go out of status.
As for your second question, you can either call the 800 number and ask, or call a few lawyers (assuming you don't have one already) and ask what happens in your situation. A lot of times they will answer it for free. Just call around 5-10 lawyers until you get an answer/you are satisfied (best way to get free info.)

I always had trouble with that 1800 number... everytime I asked a question they would pretty much say "we can not answer that" or "you need to answer that question yourself"...

You will either get a right or wrong answer, it's a crap shoot. The 1800 number is often referred to as the "Misinformation Hotline" for a reason.
