Last 3 years Tax returns. How do I prove these?

Have been on H1B for since 2000 for a small consulting. In early stages I did get some projects but as everyone knows I was also the un-luckiest one's to be the victim of IT-downfall.

My employer did not cancel my H1 but I had to work at his other bussiness(restaurant) as a manager. Whatever he could afford he gave me but all in cash. Which I also did not mind. But the only draw-back to this was that I could not file my taxes for last 3-4 years

Now I have changed employer and have joined another consulting company
which is sposoring my H1 and filing for my GC.

Somehow I managed to generate some pay-stubs and file for H1. But for GC the lawyer is asking for last 3 years tax-returns?

What do I do about this?
How do I bring last 3 years tax-returns when I did not file any tax?

I was merely living on whatever my previous employer gave me in cash,
working as a manager at his restaurant.

Please help as to how can I show my tax for last 3 years.

It is strange thing that your attorney is asking.
PERM / LC stage no tax return of employee is necessary.

In I 140 only employer tax return is required. Consult with other attorney opinion before proceed.
