As GC is always for a future job, your previous employer can
continue your processing. When I-140 is approved, you file for 485
adjustment and submit a letter from your previous employer stating
that the job is still available.

When your GC is approved, you should go back and work for your previous employer. If you do not and INS comes to know about it,
it can start deportation proceeedings stating that you obtained
the GC with a fradulent intention. This may or may not happen.
So talk to an attorney.
