Laid off and grace period

I got laid off on Dec 18th and came to Toronto on Dec 20th 2024.

When I go back to US in Jan 2nd week 2025 I will say I am going to collect my possessions and shut down my apartment.

Do I get a 60 day grace period starting Dec 18 2024 or a new 6 month entry B1/B2 starting in 2nd week of Jan 2025? Do I need to file I 539 extension once I get back in case I only have a 60 day grace period?

The grace period ended when you left the US. You will not be able to enter on TN since you are not entering the US to work. You will have to enter on B2 status, and normally admission on B2 is for 6 months (although the officer can deny you entry or let you in for a shorter time).
 
The re-entry in B2 in January will not be automatic -- unless you have clearly established a foreign residence by then (lease, Cdn DL, plates), Otherwise you *may* be admitted on B2, but it will undoubtedly be short-dated (ie. not the normal six-month period), giving only sufficient time to wrap up your US affairs.

That is why you get that grace period to STAY in US.
