You do not have to , but you should include a letter from your employer and at least 2 months of pay stubs.
 
Personally, I included both employer letter and stubs in my application. I sent in copies of my pay stubs for the last 3 months. If your pays tub includes a "year to date" field, then that's even better.
 
I changed employers a couple of months before I had to fill out the I-864 for my wife. I included a copy of my final pay stub from my previous employer, all of my pay stubs from my current employer, and computer printouts from the payroll website regarding my job. I haven't received an RFE so I take it was ok.
