Here is a sequence of events:
1. Came to US on f-1 visa.
2. While on OPT got married to a green holder in usa.
3. Spouse filed a petition for green card in jan.2000.
4. My company applied for H-1b in may 2000 and got an
approval in jun'2000.
5. Since then have been working with the same company.

I want to go to india on vacation. Will i have any problems
getting my passport stamped?(since my spouse has filed a green card petition and since i am in non-IT field. I am a merchandising manager at a company. Someone told me that they might reject the application based on "INTENT to stay in US". Also, i have been working part-time or am on unpaid vacation occassionally since i gave birth to a child a couple of months back. Can that create a problem?
 
No, not on Immigration intent, since H holders are allowed to have immigration intent.
IT is not the only speciality field H1s are approved for. So you should not anticipate any problems. Other option you can take is to get the h1 stamping in canada.
 
Also, wouldnt recommend revealing part-time or work done outside of your H-1B classification. It is illegal for H-1B holders to engage in gainful employment with anyone who has not sponsored their H-1B.
