Though my wife’s income is above 125% of federal poverty line, I have submitted a co-sponsor (my father in Law), while applied for AOS. Now I have interview, would this increase questions at interview? Actually I did it just to be safe side. What should I answer, if officer asks me about it?

There was no need for a co-sponsor in the first place. It doesnt make a difference anyway. As your primary sponsor meets/exceeds the 125% requirement, your co-sponsor would be ignored. You should be fine. I dont see anything wrong here.
