Interview, retrogression and changing employer

With retrogression that might be very slow and even take years, how will changing employers will affect already attended interviews?

I have attended local interview and have submitted AC21 papers with new employer documents. Given finger prints and now USCIS is just waiting on visa numbers to approve my case.

What if I want to change the employer again? Or
If I'm fired?

Where will I stand? What is the status of my I-485? Should I have to file AC21 again? Too many questions.

Either they should've waited till visa numbers are available to conduct interviews, or give visa numbers to those who already attended interviews. Or give some additional light on changing employers/layoffs in the meantime.

I'm sure they are many who attended interviews and waiting for visa numbers.

You can change your jobs as many times as you like after 180 days of pending I-485. AC21 is the memo that permits you. You do not have to inform USCIS, unless you receive an RFE (unlikely, since your interview is over). In the rare even that you do receive RFE, make sure you can prove that all your new jobs were similar to the one in your LC.
