I thought that we just get one interview and that too for I-485. Somebody told me that after 2 years, we'll also have an interview to remove conditional GC, is this right?

Its a possibility, its not a mandate.
You may be called for an interview if uscis thinks you havent submitted sufficient evidence for your marriage based petition. Or
USCIS conducts interview for audit purposes
