Since you have crossed the 180 day mark, your employer has no jurisdiction over the 485 application. Just go ahead and find a similar job and you should be fine. Take care not to take a job too different from previous one.
There is no such thing as amended 485. Acc to INS guidance, the onus of informing INS is on you and so is the responsibility for proving that the job is in the same classification. For text and analysis of INS guidance go to www.immigration-law.com
If you tell INS that you are changing jobs, they will know from paystubs etc. I am not an expert on 180 day rule. Look at the main 485 page for a discussion on the topic of getting laid off before 180 days.
