Living in the US as a student and will be working on a TN soon. Let's say I get rejected at the POE for whatever reason; can I still enter the US as a tourist/no-Visa status? I'd be doing it cuz my apartment, etc. are all in the US and at the very least, I'd have a return flight scheduled to come back to the US. I'd prefer to re-enter the US and then try again at another Canadian POE (let's assume the error was something with paperwork, etc.)

No. To enter as a tourist, you need to have full-fledged ties in canada maintained at all times. If denied TN, you won't have those ties.
Btw, you were supposed to maintian these ties while a student as well.
Don't try a different POE if your petition fails. Fix the petition (likely from outside US) and try again at same POE.
And work on getting a fail-safe petition.
