I-94s on H-1for me, on H-4 for wife, will expire on Jan 2002. Receipts of 485s and EADs for both of us got last month. Definitely we cannot get approved 485s before H visas expire. Now: Do we have to apply for H-1 and H-4 again to keep I-94s valid?

You do not have to do anything, since your 485 is pending.

A pending 485 means you are in status. Do not worry about anything.

They are two seperate beasts eve though related..
