I submitted all the paperwork required for the I-751, but forgot to attach affidavits. Is it a big deal?

I find interesting that people ask what to NOT include, remember that is YOUR package and every life is different. If you want to attach them so do it. In general be sure to include all your financial information like tax returns or transcripts (transcripts at least came from IRS directly), joint accounts, credit cards, insurances, etc.
 
I would certainly hold on to the affidavits, just in case you receive an RFE (dont mean to scare you :) ) Also, if you think you have enclosed enough evidence to prove your marriage was entered in "good faith" then there is nothing to worry. Just that if you include more documents, the better and the faster I would expect USCIS to process your application, but apart from some documents nothing is a "must". If you read the instruction to the application, it lists out a few documents as "examples" and not "mandatory".
