----- you can use EAD or H1 transfer to join new employer( h1 transfer is in your best intrest, if you lost H1 status or dont maintain H 1 status join with EAD AND file EAD,AP renewal always 6 months advance

(h1b before laid off), do I still keep my legal status?
----- i dont understand what you are trying to say.
and

-------- yes if you have valid EAD in hand

As long as your I-485 is pending, you do have a legal status. But you need to find a similar job profile to be eligible for I-485 approval. To get a new job you can either do H1 transfer or you can use your EAD. H1 transfer is always preferable. Yes, you can work again after a period of unemployment. Only issue is that when USCIS will ask for EVL/proof of employment (if they ask at all), you should be able to show them.
