how to fill DSP-122 and DS-230 forms for a family contain children older than 21 ?

the instructions was to write only the children under 21 years so i didn't write them because thy was older than 21
 
They are not included into DSP-122 - there is no place to include them.
You could include them into DS-230, but you do not have to.
They will not be able to get visas with you.
