H1B quota + recapturing h1b time - please help

- Initially I worked on a H1B for a profit organization
- Then I converted to a F1 visa
- Currently I am back to a H1B visa, but this time for a non-profit organization

Now if I want to work for a profit organization again will I come under the H1B quota?

Also I spent 6 months outside the USA in my H1B visa (on a project for the H1B employer). Can this time be subtracted from the 6 year limit for H1B visa? If so what documents are needed for this?
