H1B expiring on 26th Jan 2007, need to travel outside the country during that time

Hi,
My H1B visa with my current employer is expiring on Jan 26, 2007. I need to travel to India for my wedding on Jan 10,2007 and be back by Jan 20th 2007.

Can I try any of the following options?

Option#1: Can I ask my employer to file extension now and also at the same time block a date in the Indian consulate for my stamping in January 2007. Then when I go for my wedding, I could also get it stamped and return back...

Option#2: Can I ask my employer to file for extension now and ask them to expedite the process through Premium processing? After they do this, can I get a stamping date in Mexico or Canada and stamp my visa before I leave for India?

Please advise on this. I am extremely worried about what I should be doing.
