I entered the country last on a H1 and will be traveling shortly and will reenter using EAD and AP.

While leaving the country, will they collect the I-94 which I received as a result of the H1?

When reentering on EAD and AP, do we need to fill out a I-94? Do we need to present both the EAD and AP with our passport to the officer at the POE or is it recommended to just present the passport and AP?

You have to surrender your current I-94 before you leave US, when you check in give it to Airline staff at counter in US

When you return at POE you have to show AP, Passport and you have to fill up I-94 card that will be provided to you in Flight before landing in US and present this I-94 along with Passport, AP, I-94
they dont ask for EAD

Better keep the copy of I-485 filling receipt with you INS Inspector may ask for this
 
One last q...

On my return, do I have to give one of the AP copies to the airline official?

You have just to show your AP to Airline official and you have again to show your Passport and AP at US POE the INS officer will check in the computers and will stamp your AP and I-94
