This is my opinion.
For H1 transfer to another employer, you need to submit paystubs from previous employer. This is the proof that you were employed with previous employer. I have also seen cases where H1 transfer worked even without paystubs. I would suggest that you ask your new employer to file H1 transfer with premium processing, you will get a decision in 2 weeks or less. As your H1 is just approved yesterday, technically you are supposed to join now and in this scenario, you cannot get a paystub in next 2 weeks (assuming they pay every 15 days). So it may work.

If it doesn't work, stay with your current employer, work hard to get a project. Once you are on payroll, then transfer your H1. BTW, you should make sure if you are bound by any contract etc with your current employer.
