I have opted for consular processing for myself, wife and 2 kids (one born in India) after my I-140 was filed. My lawyer mistakenly forgot to file the dependents (my wife and first son) during the I-140 stage. How will this impact my CP interview. My wife and son both have H4 stamps on their passport and are currently in India taking care of my mom who is going thru Cancer treatment.

I dont think that dependents names are reqd. to filed during I-140 stage. It is something the employer files for you, not your family. Once that is done, when you send your packet-3, make sure to send for your wife and kid, and also attach marriage certificate for you and birth certificae for your kids (copies), and you should be fine.

Not quite sure, but since you can alwayz put the list of dependents on packet 3, which you will intimate to the consulate and you should
be fine and they will add thier names in the appointment letter
so that all of U are scheduled to attend the interview at the same time.
 
As advised by others.... Packet 3 is where you want to add your dependednts

send proof of dependent status(MC/child BC) and they will be sceduled for interveiw with you. They do NOT need to be in US for you to file packet 3
No issue to stress. Start getting all the docs together and good luck.
