Lastly, it's pointless to nitpicking regarding this issue. Each case is different and some way unique. Needless to say that adjucators are also not consistent regarding this issue. But in general, combination affidavits + NAC + secondary evidence works. That's the thumb rule. Nobody claimed its fullproof, because there are exceptions. Now what you are doing basically showing all the exeptional cases and throwing your hands up.
I can show you 100 cases where USCIS asked for IRS certified copies of last three years tax returns. But there is no reason to throw my hands up assuming filing I-485 without IRS certified tax return is worthless.
