You do not have to show 485 receipt. Actually fewer companies are concerned with your receipt. What they need to know is if you are really an adjustee, and--most important, if you have an EAD.
There is no relationship with i-485 receipt and finding a new job. Your EAD may help here but not the i-485 receipt.
i-485 receipt is to justify your immigration status of "Adjustment of Status" while EAD is the employment authorization document that demonstrates that you can legally work in this country.
You can stay in the country on the basis of i-485 but you cannot legally get a job.
You can definitely demand to get your i-485 receipt. You do not necessarily have to carry it always with you. But that piece of paper is your proof for AOS (Adjustment of Status).
