Future Employer scenario

I filed my EB3 GC from company A in 12/2002. I485 RD is 6/2007. Worked @ company A till 12/2007. Transferred my H1B and currently working for company B. Haven't invoked AC21. Say whenever my dates becomes curernt and assume there is a RFE for EVL. Though I hope there should not be a problem from company B in providing EVL in a certain format. But just for worst company B poses some delay or problem in providing EVL, my question is can I provide a EVL from company C (company C is my friend's company). Since it is said that GC for future employer, I can have that offer from company C. And show company B as the company to which I transferred on H1B and not as my new sponsor. Is this possible and if yes then what are the pros and cons?

---------------------------C can provide Permanent job offer letter with same /similar job duties and it should be better if at that time you are working with C . Why not to ask the letter from B now and invoke AC21?
