I forgot to include one trip that I did for one week on Apr 2005. I realized that after I found my expired passport. I have my interview on Nov 19. Should I even mention it?

what is the risk of mentioning it at interview if you are not on the border line
for continuous residence and physical presence crterira? So mention it.

The only risk I can see is that if you mention it then the IO get mad:"Why didn't you write it down in the first place?" You said :"I forgot" the Io said:"So you forgot. How can I be sure that you did not forget anything
else?" then he starts torturing you
 
Yes. During the interview the officer will ask you about trips abroad. At that time you should mention you forgot to include that trip. It is not a big deal, as long as you are honest about it. There is a high probability that the interviewing officer will check your expired passports for exit/entry stamps. You don't want to give the impression you are hiding something.

Not a big deal at all. N400 is incomplete until you are sworn in to tell the whole truth, which can only happen during the interview. So, just mention it to him that you forgot about a week in Bhutan, and amend the N400. Good luck and no need to eat sweat potatoes over this one...:)
